Hawaiian Pie

 

This is a wonderfully simple dessert that is made so quickly and with simple ingredients that you probably always have in you kitchen!  In case psyllium is not something you do have…you could simply substitute for chia seeds and it would be equally delicious 🙂

 

Did you know…?

 

Psyllium is the main ingredient in commercial laxatives. But not to worry…there is not enough in this pie to have an adverse effect on you…even if you ate the whole thing!

 

Crust

1 cup of cashews

1 cup of dates

1/2 cup of shredded, unsweetened coconut

Directions

Puree cashews, coocnut and dates in the food processor until it sticks together. Press mixture on the bottom of the pie plate and up the sides.

 

Filling

1 banana

1 orange

1 cup of strawberries

1 cup of pineapple

2 tablespoons of psyllium powder or chia seeds

unsweetened, shredded coconut

Directions

Puree all the ingredients, except coconut, until smooth.

Pour into pie crust and top with coconut sprinkles.

Refrigerate at least an hour to set up.
