This is a wonderfully delicious, light, soup that can be an appetizer or a meal.  Bound to become a real favourite

Did you know…?

Miso is very high in vitamin B12 and protein.  It is very low in calories but it is high in sodium.  Look for unpasteurized miso (raw) then experiment…it adds a wonderful fermented taste to foods!

3 cups of water

½ of a juiced lemon

2 cloves of garlic

2 tablespoons of  unpasteurized

Shiro miso paste

¼  teaspoon of salt (optional)

Chopped green onions or chives

2-3 mushrooms thinly sliced

Small handful of bean sprouts

Put all the ingredients except green onions, mushrooms and bean sprouts in a blender and blend well.  You can blend until warm, being careful not to let it get hot.  Pour into bowls and garnish with chopped green onions, mushrooms and bean sprouts. Delicious!
