What do you do when you have so many cucumbers that you don’t know what to do with them?  When your bountiful garden just keeps giving you more and more..

Well you could pickle them…which is amazing…and I’ll share with you a super simple way to ferment those cukes, that locks in all the taste and makes them a probiotic powerhouse!

You could do what my dog Sky would do…

She would go into the garden, find the biggest one in there and then hold it between her front paws and happily munch away until it was just a memory!  Our neighbours used to laugh and laugh at our precious vegetarian puppy! I

I was so proud!

You could make the most amazing smoothies!

You could make cucumber mint water!

You could do a spa day and put cucumbers on your eyes…but that really only uses two slices…

Or…

You could make this absolutely delicious cucumber salad!  It is fabulous on so many levels!  It is simple, filling, could be a side salad or a main course…

Cucumber Dill Salad

Simple and absolutely delicious! This one has become a favourite with my children!

Ingredients

1/2  cup of cashews
1/2 of a cucumber
 1 cup of water
 1/8 cup of fresh squeezed lemon juice
 3 dates
 1-2 cloves of garlic
 1/2 - 1 teaspoon of salt
 A few sprigs of fresh dill
 Cucumbers

Put all of the ingredients except the cucumbers into a blender and puree until smooth. Slice up the cucumbers and toss with the dressing. Add a small sprig of fresh dill and voila…you have an amazingly delicious salad!
