Fresh Corn Salad…with Dill Dressing

Extreme flavour!  So different and tasty!  Very simple and impressive little salad!

Corn contains folate which is so important for fetal health but not only that, it is also important for heart health and it is high in fiber.  As with anything…moderation is the key…but having corn is a wonderful way to add some yellow to your life!

Ingredients

Fresh corn on the cob or frozen corn

1 cup of chopped zucchini

2-3 cloves of garlic

½ teaspoon of salt

Small bunch of fresh dill

A tablespoon or two of water as needed

Directions

Put everything except the corn in the blender and blend until smooth.

If you are using fresh corn, cut the kernels off the cob and put in a bowl.  Drizzle a small amount of the dressing over the corn and mix well.

Great on it’s own, as a side dish or topper for other salads.
