Mint Chocolate Chip Ice Cream
My daughter came up with the idea for this one…and is it ever a winner! Fresh, sweet and perfect…just like her!
1 cup of loosely packed mint leaves
3 frozen bananas
2 tablespoons of raw cocoa nibs
A touch of Stevia if you like it a little sweeter like I do!
In a food processor, put the mint leaves and pulse until they are finely chopped. Cut the bananas into 1” pieces and put them into the food processor and puree. You will have to scrape down the sides. When it is the consistency of ice cream, add in the chocolate nibs and mix briefly. Spoon ice cream into bowls, garnish with a mint leaf and serve immediately.
