Coconut Date Energy Bars

Yummy little bars that sweet and delicious and easy to have on hand when you need a little something!

Did you know…?

Coconut milk is an excellent natural remedy for sore throats and for ulcer pain. Coconut is also very high in protein.


2 cups of coconut

1 cup of dates, soaked at least 2 hours

2 cup of almond pulp, packed

1 cup of walnuts

½ cup of water (use date soak water)

3 tablespoons of finely ground flax seeds

Stevia to taste

In a food processor, puree all the ingredients until they are thoroughly mixed.

Roll dough into a ball and put on a cutting board or clean, flat surface.

Cover the dough with a large piece of plastic wrap and roll, with a rolling pin, until the dough is about ½ inch thick.

Cut into small bars or shapes and place directly onto mesh dehydrator sheets.

Dehydrate at 110 degrees, turning once for approximately 6-8 hours.

Store in an airtight container.
