The other day…someone asked me why in the world I would ever want to be vegan.

Hmmm…

Well…I could want to be Vegan to do my part to help save the planet from deforestation, greenhouse gases, species extinction…

Or…I could want to be Vegan to save the animals from torture, rape, mutilation…

I could want to be Vegan to have pure sweet Karma…

But I didn’t say any of that…what I said was that I am vegan because…

It makes me feel so damned good!

And it’s true.  I grew up eating meat and a lot of it.  Practically every meal had meat as it’s main component.  And I felt like a slug.

I never had an abundance of energy even as a kid.  So when I was in my twenties and on my own…I started to experiment.  I loved creating food that made fruits and veggies center stage.  And while this is how I ate when I was on my own…I didn’t have the courage to stand up to my peers and declare this was my new way.

So I was in the closet for a few years!

Until my first son was born. 🙂 He was so perfect and unspoiled and when it was time to start feeding him solid foods and I thought about what was in those little glass jars of baby food…all I could think about were animals long dead after lifetimes of inexplicable torture, I knew that I would never put that into my perfect baby!

And so…my new exciting life began…first as a Vegetarian and for the past 11 years as a Vegan and I do feel amazing eating a completely vegan diet…mostly raw…I really did do it for the animals…that sweet Karma…it’s just a perk!

Chocolate Pear Cake

I know I say this all the time…but this one is truly one of my favourites…I love pears! This is a simple to make, absolutely delicious cake . It has such a lovely smooth flavour…it is hard to resist! 

Tip

Pears don’t ripen on the tree…it is only after they have been picked that they become soft, sweet and delicious. Leave them on the counter for a few days and they will be juicy and ripe. To know for sure if they are ready, touch them just under the stem, if they yield to your touch, they are ready to be enjoyed!

Crust

1 cup of dried pears, packed (or other dried

fruit such as dates or raisins)

1 cup of walnuts

Filling

3 cups of cashews, soaked for at least 2 hours

4 fresh pears, cored (if they are organic

leave the peel on…if not, peel them)

1 tablespoon of vanilla

1 tablespoon of fresh squeezed lemon juice

½ cup of raw cocoa butter, melted

A dash of Stevia

Topping

½ cup of raw cocoa butter, melted

¼ cup of raw cocoa powder

1 tablespoon of vanilla, alcohol-free

A dash of stevia

To make the crust, put all the crust ingredients into a food processor and process until it becomes crumbly and sticks together. Put mixture into a springform pan or a pie plate and press it down…I use the back of a spoon to smooth it out.

Put all the filling ingredients into a food processor or blender and blend until smooth. Pour onto the crust and refrigerate.

To make the topping, whisk all of the ingredients together and drizzle onto the cold cake. It will harden immediately and will be ready to serve. This one is a winner…enjoy immensely!
